Summer Cucumber Avocado Soup

Cold soup is the perfect meal during summer as it is refreshing, light and healthy. The smooth texture of avocado gives a thick consistency to the soup, which is balanced by the freshness of the cucumber. Spices and herbs added make it even more savory. 

Recipe for two:

  • 2 avocados peeled

  • 1 cucumber peeled

  • 1 scallion

  • 1 clove garlic

  • 4 tablespoons of freshly squeezed lemon juice

  • 2 slices of ginger 

  • 1 cup of cold water

  • 1 /2 cup of coconut milk

  • 2 tablespoons of olive oil

  • 1 pinch of chili flakes

  • 5 leaves of coriander

  • 5 leaves of mint

  • Salt and pepper 

  1. Put all the dry ingredients in a food processor and pulse until the mixture is thoroughly chopped.

  2. Add the olive oil, the lemon juice and the coconut milk and continue to process until smooth.

  3. Adjust with a cup of water if necessary 

  4. Chill for two hours.

  5. Garnish and season with salt and pepper.

  6. A table!
